| Agra History : |
| Agra is an old city and it derived its name from Agrabana, a forest which is mentioned in the epic Mahabharata. In recent times Agra came into prominence when Sikandar Lodi made it his capital city in 1501. The Lodi ended very soon and Agra passed into the possession of the Mughals. The Mughal emperors with their passion for building, endowed the city with some of the finest structures in the world. During the time of the third emperor Akbar Agra came into its own. He embarked on the construction of the massive Agra Fort in 1565. Agra continued to retain its importance and Shah Jehan, Akbar's grandson ornamented the city with that masterpiece of Mughal architecture -The Taj Mahal and built several other beautiful buildings within the Agra Fort. |

| Shopping In Agra : |
| The fertile plains of Uttar Pradesh
offered an ideal habitat for the early Muslim settlers who came in
the wake of the establishment of Turkish rule in India. The
hostility was confined mainly within the ruling classes - The Rajas,
Rawats, Rais and the original village echelons and the muqtis and
their subordinates. Muslim concentration in towns was primarily due
to their socio-political organizations, their exclusive racial and
religious complexion. Muslims have always had an influential upper
class consisting of Nawabs, Rajas and Chaudhries because of their
historical antecedents. The middle class, comparatively thin among
Muslims, is engaged in the traditional trades like leather. Commerce
and trade was not a Muslim forte. Muslims have overwhelmingly large
lower class, appallingly poor, ignorant, conservative and
hide-bound. It consists of artisans, petty traders, weavers, carpet
makers, labourers, butchers, kite-makers, vegetable-settlers and the
like. |

| Agra Cuisines : |
| |
Traditional
Behaviour :The finest cooking in India was derived from
the Mughals and did influence the royal kitchens of India. Agra's
traditional Persian-influenced cuisine is renowned for its rich
cream and curd-based sauces, kebabs, nan and tandoori breads roasted
in earthen ovens, pulao rice dishes and milky sweets such as kheer.
The great Muslim rulers brought their panache and elegance of living
to India's culinary scene. The idea of community dinning and lavish
and extravagant banquets were introduced to India. Dishes were
served in jade, silver and Chinese porcelain. The splendor of the
Mughal/Muslim cuisine is reflected in the Muglai Cuisine of India
which is the richest and the most lavish in the country.
|
| City Specialties :
The city's speciality is Mughlai cooking. The superb Mughlai cuisine
with its luscious sauces of milk, curd, cream and crushed nuts is
available in major restaurants in the big cities. The irresistible
Mughlai food is reminiscent of the Nawabi and the Mughal glory. |
| |
| Regional Specialities :
All the princely states of the past, boast of their own regional
specialties. Agra is also known for two delicacies: The delicious
ultra sweet candied pumpkin petha (crystallized marrow) and crisp
spicy dalmoth (lentils) and Gajak. |
